Hashi

In Georgia, this soup is known to all men. It is no secret that in Georgia they love feasts, and since no feast is complete without wine or strong drinks, the next day, after such libations, Georgian men are used to being "treated" with hash

It is eaten, following a certain ritual, in the early morning

Ingredients🌶

Beef legs

Beef tripe

We recommend buying already peeled and ready to cook, otherwise, you will need a lot of time and effort to clean the legs and the scar🦴

🥛Milk

🌿Any greens

🧄Garlic

🧂Salt

Preparation 👩🍳

We will need a large pot🙌

Properly wash the legs and the scar, cut into pieces and pour cold water 20-30 cm above the meat

As soon as the broth boils, turn down the heat to a minimum and leave to cook for 5-8 hours

WE DO NOT SALT❗️

Half an hour before turning off the stove, add a little milk🍶

We define readiness as follows: if the skin easily moves away from the leg, then the hash is ready👌

Now it needs to be filtered

To do this, first remove all the products from the broth into a separate bowl🍖

Put gauze rolled up in several layers in a colander and strain the broth into another smaller saucepan

All soft parts are crushed, cleaned of bones and put into broth🍜

Finely chopped fresh garlic, herbs, and salt are always served with hashi

Everyone adds as much greens and garlic to the plate as needed🧂
