Ingredients
chicken — about 1.5 kg;
fresh tomatoes — 500 g;
onion — 2-3 medium heads;
garlic — 2-3 cloves;
tomato paste — 2 tablespoons;
cilantro — a small bunch;
basil — a small bunch;
dry white wine — 100 ml;
salt — to taste;
Preparation
We cut up the chicken carcass, fry the chicken pieces on both sides until golden brown and put them in a saucepan.
Then fry the onion, cut into half rings.
Peel the tomatoes and chop them finely.
Add the onion and tomatoes to the chicken in a saucepan, add the tomato paste and mix.
Place the chicken in tomato sauce on the fire. Pour in the wine and, increasing the temperature to the maximum, stand for 4-5 minutes (the alcohol should evaporate). Then reduce the heat and simmer the chicken meat under the lid for 20 minutes. Do not add water — the chicken should be cooked only in tomato sauce.
After the specified time, load the finely chopped greens into the pan, squeeze out the garlic cloves, add salt, seasonings and continue to simmer for another 20 minutes until fully cooked.
